Kung Pao Chicken recipe from China

Ingredients:
- 1 lb boneless, skinless chicken breast, cut into bite-sized pieces
- 2 tablespoons vegetable oil
- 2 garlic cloves, minced
- 1-inch piece of ginger, peeled and minced
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1/2 cup roasted peanuts
- 2 scallions, sliced
- 1 tablespoon cornstarch
- Salt and pepper
For the sauce:
- 2 tablespoons soy sauce
- 1 tablespoon hoisin sauce
- 1 tablespoon rice vinegar
- 1 tablespoon cornstarch
- 1 tablespoon water
- 1 teaspoon sugar
- 1/2 teaspoon sesame oil
- 1/4 teaspoon red pepper flakes
Instructions:
In a small bowl, whisk together the soy sauce, hoisin sauce, rice vinegar, cornstarch, water, sugar, sesame oil, and red pepper flakes. Set aside.
In a large skillet or wok, heat 1 tablespoon of the vegetable oil over high heat. Add the chicken and cook until browned and cooked through about 5 minutes. Remove the chicken from the skillet and set aside.
In the same skillet, heat the remaining tablespoon of vegetable oil over high heat. Add the garlic and ginger and cook for 30 seconds, stirring constantly.
Add the bell peppers and cook for 2-3 minutes, until slightly softened.
Add the cooked chicken back to the skillet, along with the peanuts and scallions. Stir to combine.
Whisk the cornstarch into the sauce mixture and pour it over the chicken and vegetables. Cook for 1-2 minutes, until the sauce has thickened.
Serve hot with rice.
