Ingredients:
- 1 kg chicken, cut into pieces
- 2 cups basmati rice, washed and soaked for 30 minutes
- 2 onions, thinly sliced
- 2 tomatoes, chopped
- 1 cup yogurt
- 2 tablespoons ginger-garlic paste
- 1 teaspoon cumin seeds
- 1 teaspoon coriander seeds
- 1 teaspoon red chili powder
- 1 teaspoon turmeric powder
- 1 teaspoon garam masala powder
- 4-5 green cardamom pods
- 4-5 cloves
- 1 cinnamon stick
- 2 bay leaves
- Salt, to taste
- Oil, for cooking
Directions:
In a large pot or Dutch oven, heat some oil over medium-high heat. Add the sliced onions and fry until golden brown.
Add the chicken pieces to the pot and sauté for a few minutes until lightly browned.
Add the chopped tomatoes, ginger-garlic paste, and all the spices to the pot. Mix well and cook for a few minutes until the tomatoes are soft and the spices are fragrant.
In a separate pot, bring 4-5 cups of water to a boil. Add the soaked rice to the boiling water and cook until the rice is almost tender but still has a bite to it.
Drain the rice and add it to the pot with the chicken. Add the yogurt and mix well.
Add enough water to the pot to cover the rice and chicken. Cover the pot and let it simmer on low heat for 20-25 minutes or until the rice is fully cooked and the chicken is tender.
Once done, turn off the heat and let the biryani sit for 5-10 minutes. Fluff up the rice with a fork and serve hot with raita (a yoghurt-based side dish) and chutney.
